Meatloaf:
1 1/2 pounds lean ground beef
1/2 pound ground chicken
1 1/2 cups bread crumbs
8.5 ounces canned crushed pineapple, drained well
1/2 white onion, chopped
2 stalks celery, chopped
2 eggs
1/4 cup milk
1/4 cup soy sauce
1 tablespoon minced ginger
1 teaspoon salt
1/4 teaspoon pepper
Glaze:
1/2 cup soy sauce
1/2 medium orange, juiced
1/4 cup mirin
1/4 cup water
2 tablespoons brown sugar
3/4 teaspoon minced garlic
3/4 teaspoon minced ginger
Preheat oven to 350 degrees.
Combine meatloaf ingredients, blending lightly but well.
Press into a loaf pan.
Bake 50 minutes.
Combine all glaze ingredients and blend well.
Pour 1/4 cup glaze over meatloaf 5 minutes before the end of cooking time.
Slice meatloaf and serve with remaining glaze.
